This granola is my new favourite breakfast, the figs and coconut are a perfect match and it’s so addictive – definitely not bird food as my boyfriend would call it! The combination of crunchy oats, nuts and seeds against the juicy dried fruit makes such a lovely contrast. I would eat this breakfast with either yogurt and fruit or sprinkled over porridge (clearly I love my oats!)
Makes 1 large jar;
– 2 cups GF oats (200g)
– 1 cup almonds (160g)
– 1/2 cup pumpkin seeds (60g)
– 1/2 cup desiccated coconut (50g)
– 1/2 cup coconut flakes (30g)
– 2 tsp cinnamon
– 1 tsp maca powder
– 4 tbsp coconut oil
– 1/2 cup maple syrup (125ml)
– 1 cup figs/raisins (120g)
Preheat oven to170C/325F/gas mark 3
Combine all the dry ingredients in a large mixing bowl, leaving out the flaked coconut and dried fruit. Make sure everything is well mixed and the spices are fully incorporated.
Heat the coconut oil in a small pan until melted; stir in the maple syrup and take off the heat. Pour the coconut oil and maple syrup mixture over the dry ingredients and stir to fully coat.
Divide the mixture between two baking trays, spreading out the mixture as much as possible. Pop into the middle of the oven and bake for 30mins, stirring the mixture occasionally. After 15mins add in the coconut flakes.
Remove the granola from the oven once it has turned lovely and golden and leave to cool. Stir in the dried fruit and store in an airtight container.
