As I prepare to bid farewell to my parents jetting off to the lovely Kefalonia this week, I’m craving a tropical, fresh and summer holiday inspired breakfast. As a porridge lover, overnight oats is the perfect base my chosen ingredients – kiwi and coconut.
Kiwi and coconut work amazingly well together and this creamy, filling breakfast is perfect for anyone dreaming of their summer holiday (or wishing they were going abroad this summer like I am!) Coconut yogurt is perfect as the base for this breakfast and works lovely with fresh kiwi on top. Currently all I’m wanting to eat is fresh fresh fresh ingredients!
– 1/2 cup GF oats (50g)
– 1/2 cup milk (120ml)
– 125ml coconut yogurt
– 1 tsp sweetener (honey, agave, maple)
– 1 tbsp chia seeds
– 1 kiwi
– 1/4 cup coconut flakes
Stir the ingredients together in a bowl and pop in the fridge overnight.
Top with the kiwi and coconut flakes in the morning and enjoy your tropical, easy peasy breakfast – overnight oats couldn’t be more simple!
