Banana Black Bean Brownies

These brownies are full of rich, chocolatey goodness – I promise you can’t taste the black beans at all! The banana and black beans help make a delicious gooey texture, creating an indulgent mid afternoon or evening snack. I have such a sweet tooth so these are perfect to keep in the fridge for whenever the chocolate cravings hit – they also freeze well so you always keep some aside for upcoming weeks. Be adventurous and try these out – you won’t be disappointed!

Ingredients
Makes 9 squares;

– 1 tin black beans (400g can) – drained, rinsed and completely dried
– 1 very ripe banana
– 1/2 cup ofΒ GF oats (100g)
– 2 tbsp coconut sugar
– 2 tbsp cacao powder
– 1 tsp cinnamon
– 1/4 cup coconut oil, melted
– 4 tbsp cup honey
– 2/3 cup chocolate chips (230g)

Method
Preheat
oven to180C/350F/gas mark 4 and line a baking tray with greaseproof paper.

Pop everything into a food processor except the chocolate chips and blend until smooth. Then stir in the chocolate chips and transfer into the baking tray – simple as that!

Bake for 15-20mins and leave to completely cool before cutting into squares.
