Chocolate, Blueberry and Pecan Baked Porridge

Ever wanted to eat chocolate cake for breakfast? If yes then I promise this baked porridge will be your new favourite meal! I still remember the first time I made baked porridge – it was a lightbulb moment and I was so excited that this is actually a healthy breakfast!

The combination of sweet blueberries, chocolate and crunchy pecans work amazingly well together in this recipe – resulting in a indulgent but still healthy breakfast (winner winner!)

Ingredients
Makes 1 serving

– 1 small overripe banana
– 1/2 cup GF oats (50g)
– 1/2 cup milk (120ml)
– 1 tbsp cacao powder
– 1 tbsp peanut butter
– 1 tsp honey
– 1 tsp cinnamon
– 1/2 tsp nutmeg
– 1/2 tsp baking powder
– 1/4 cup pecans (30g)
– small handful blueberries

Method
Preheat oven to 180C/365F/gas mark 4

Mash the banana in a bowl and add in the remaining ingredients – minus the blueberries and pecans. Mix ingredients together, making sure there are no clumps of peanut butter or cacao.

Pour into a small oven safe dish and sprinkle the blueberries and pecans on top, pushing some into the mixture. Pop in the oven and bake for 20 mins.

Transfer into a bowl or eat straight out of the dish – be careful as it’s extremely hot!
