Chunky Monkey Granola

All of my favourite ingredients are in this yummy chunky monkey granola; banana, peanut butter and chocolate – a match made in heaven in my eyes! Melting the peanut butter with the wet ingredients creates such an indulgent and tasty coating for the oat/nut mixture.


Makes 1 large jar;

– 2 cups GF oats (200g)
– 1 cup almonds (160g)
– 2 cups walnuts (125g)
– 2 tsp cinnamon
– 1/2 cup dates (90g)
– 1/2 cup banana chips (45g)
– 1/4 cup dark chocolate, chopped (45g)
– 1/4 cup coconut oil (50g)
– 1/4 cup honey (75g)
– 2 tbsp peanut butter

oven to 170C/325F/gas mark 3

Combine the oats, almonds, walnuts and cinnamon in a large mixing bowl; making sure everything is well mixed.

Heat the coconut oil and honey in a small pan until melted; take off the heat and stir in the peanut butter. Pour the wet mixture over the dry ingredients and stir to fully coat.

Divide the mixture between two baking trays, spreading out the mixture as much as possible. Pop into the middle of the oven and bake for 15-20mins, stirring the mixture occasionally.

Remove the granola from the oven once it has turned lovely and golden and leave to cool (this helps create those lovely clusters). Stir in the dates, banana chips and dark chocolate when it has fully cooled and store in an airtight container.

This granola can be eaten for breakfast, as a snack or for dessert – the possibilities are endless!
