Unicorn Porridge

So I realise my Unicorn porridge is a little more tame than others (get it?) i.e there’s no glitter and I’ve only focussed on two colours, but I think it’s worthy of the title anyway!

I also realise my puns are very very bad…

This porridge is really easy to make and all you need to re-create the pretty colours are blueberries and raspberries! My everyday porridge is made with mashed bananas for extra sweetness and creaminess, but you can leave out the banana if it’s not your favourite!

Ingredients
– 1/2 overripe banana, mashed
– 1/2 cup GF oats (50g)
– 1/2 cup milk
– 1/2 cup water
– 1 tsp honey
– 1 tsp cinnamon
– 1/4 cup blueberries
– 1/4 cup raspberries

Method
Pour
 the water and milk into a small saucepan, transfer to the hob and allow to boil. While this is boiling mash your banana in a bowl and add your oats, cinnamon & honey.

Turn the heat down as soon as the liquid has boiled and add your oats etc to the pan, stirring together until everything is fully mixed. Heat on a low temperature for a few minutes and continue to stir. This will start to thicken up.

Split the porridge mix between two pans, adding the blueberries to one and the raspberries to the other. Whilst still on a low heat, use a fork to mash the fruit into the porridge mix. Keep mixing together until the fruit have started to break down and release there juices.

Turn the heat off when you have a lovely bright colour and transfer to a bowl. Add any extra toppings and enjoy!

Glitter is optional if you want to go all out Unicorn!
