Build Your Own Granola Breakfast Bowl

Now anyone who knows me will know how much I love granola – it’s just the perfect breakfast food! Tasty, easy to make, transportable and goes with just about everything. I have mine on top of smoothie bowls, with porridge or served with yogurt and berries. This ‘build your own granola bowl’ is so easy to make and lets YOU choose your own recipe.

HOW TO BUILD YOUR BREAKFAST BOWL

Make your tailor-made GRANOLA

Choose your BASE – yogurt, smoothie or porridge
+
Add your FRUIT – berries, stewed apples, caramelised bananas, the choice is yours!

All you need to do to make the granola is pick a component from each category below, or choose a selection to mix it up.  Then bake it following my method and serve with your favourite base and fruit – easy peasy!

GRANOLA
Makes 1 small jar;

– 1 cup GF oats
– 2 cups nuts – almond, hazelnut, pecans – or a mix of all three
– 1 cup extra – dried fruit, coconut flakes, pumpkin seeds (stir these in at the end)
– 2 tsp spices – cinnamon, nutmeg, ginger – or a mix
– 4 tbsp coconut oil
– 2 tbsp sweetener – honey, maple, date nectar

METHOD
Preheat oven to 150C/300F/gas mark 2

Combine the dry ingredients together in a large mixing bowl; making sure everything is well mixed.

Heat the coconut oil and honey in a small pan until melted. Pour the wet mixture over the dry ingredients and stir to fully coat.

Spread the mixture on a baking tray as evenly as possible. Pop into the middle of the oven and bake for 40mins, stirring the mixture every 5-10mins.

Remove the granola from the oven once it has turned lovely and golden and leave to cool (this helps create those lovely clusters). Store in an airtight container.

My tailor-made granola combination was cinnamon & date – using oats (of course), almonds, hazelnuts, cinnamon, dates and date nectar. What’s your favourite granola combination? Let me know in the comments below as I’d love to hear from you!
