Cinnamon Baked Apples & RAWNOLA

Happy bank holiday weekend to everyone in the UK! I’m back from my week camping in Devon and ready for the last few days of summer. Camping was lovely and I’m feeling all refreshed from my coastline break – there’s nothing better than waking up to a view of the sea every morning!

Before leaving for Devon we had lots of delicious apples to eat from our tree in the garden, so I decided to make these yummy cinnamon baked apples with rawnola (raw granola if you didn’t guess!) I know apples are usually an autumnal fruit but this snack/dessert is perfect for cooler days, which had been most of this summer if you ask me!

This recipe is very easy to make and only takes 10 mins – I love baked apple for a simple dessert or breakfast topping (baked apple and cinnamon porridge anyone?) The rawnola is simply oats and dates whizzed up in a food processor, with a dash of honey and cinnamon. The dates provide the sweetness so you only need to add a little honey, if any at all!

INGREDIENTS
Serves 1

APPLE RINGS
– 1 red apple
– 1 tsp cinnamon
– 1 tsp honey

RAWNOLA
– 1/2 cup dates, pitted and soaked* (75g)
– 3 tbsp GF oats
– 1 tsp honey
– 1 tsp cinnamon

COCONUT YOGURT

*if using dried dates I usually soak them in boiling water for 5mins before using – this softens them up so they blend easier. If using Medjool dates they don’t need soaking and can be used straight away.

Method
Preheat oven to 180C/365F/gas mark 4.

CoreΒ and chopΒ the apple into 1cm slices, place on a baking tray and sprinkle with the cinnamon and honey. Bake in the oven for 10mins.

Combine all of the ingredients for the rawnola in a food processor – you still want the mixture to be crumbly so stop the processor before it turns into a big rawnola ball.

Place the baked apple slices on a plate, along with the rawnola and coconut yogurt – any leftover rawnola can be saved for your breakfast!

This is such a quick and easy recipe but tastes so good. If you ever want a last minute dessert, this is the recipe for you!
