I’m sure if you follow me on Instagram, you’d have seen how much I’ve been in love with Deliciously Ella’s new Bircher Muesli! It’s the ultimate ‘don’t have time for breakfast’ breakfast. Traditional bircher muesli is left overnight to allow the oats to soak up the liquid, whereas Ella’s version uses milled oats (oat flour) which means it has a much shorter soaking time. It’s pretty amazing that once you’ve poured in the liquid, it’s ready in minutes!
I was so impressed by her idea that I thought I’d have a go at making my own instant bircher muesli. I’ll admit, my version isn’t quite as ‘instant’ as Ella’s. You still need to grate/chop the apple – but it’ll be ready under 5 mins so I think it still counts! I like to keep to big jar of oat flour aside for recipes like this, if I had to mill the oats every time I think I’d be put off! Preparation is always key guys.
– 1/2 cup GF oat flour (60g)
– 1 red apple, cored – half grated & half chopped into matchsticks
– 1 tsp cinnamon
– 1 tbsp pumpkin seeds
– 1 tsp chia seeds
– 1/3 cup milk (80ml)
– 1 tsp maple syrup
– 1 tbsp peanut butter
Grate half of the apple into a bowl and chop the other half into matchsticks to set aside for later.
Add the remaining ingredients into the bowl with the grated apple and mix until it’s creamy. Add more milk/oat flour depending on whether you like the consistency slightly thicker/thinner.
Spoon on a big dollop of peanut butter and add your apple matchsticks, then you’re ready to eat!
I can’t wait to eat this over the next few weeks – it’s definitely giving me Autumn vibes with the yummy apple and cinnamon!
