Healthy Chocolate Easter Truffles

With Easter fast approaching this weekend, it’s time to embrace all things chocolate related and get ready for a weekend of eating yummy food!

To celebrate the occasion, I’ve created these delicious healthy chocolate easter truffles for you to make for your friends and family. As much as I love tucking into a huge Easter egg, having so much chocolate can be a little overwhelming at times! These healthy truffles are great if you want just a little taste of indulgence without being over-faced.

As with most of my sweet bites, I like to keep a tupperware box full of treats in my fridge to munch on when I’m craving a chocolate snack!

Healthy Chocolate Easter Truffles

With only 5 ingredients in the chocolate truffle mixture, these little bites are super simple to make. You won’t need to buy any unusual, hard-to-pronounce superfoods or powders either. All the ingredients you will need are in your local supermarket!

Finding the time to make these recipes is hard enough and you don’t need the added delay of driving to a specialist health shop to find the ingredients. If I can’t find them in my local supermarket, they won’t be included in my recipes. The ever increasing range of the free from isle makes this much easier!

Chocolate Hazelnut Tart
Salted Caramel Chia Chocolate Pots

INGREDIENTS

240ml full fat coconut milk
300g dark chocolate (70%)
3 tbsp coconut oil, melted
1 tbsp maple syrup
1 tsp vanilla extract

Decoration
2 tbsp cocoa powder
1 handful shredded coconut
1 handful dried raspberry
1 handful pistachios, chopped

RECIPE

  1. Pour the coconut milk into a small pan and warm through over a low heat.
  2. While this is heating up, snap the chocolate into a bowl and pop in the microwave for 30 secs – 1 min so it starts to soften. It doesn’t need to be completely melted.
  3. Add the coconut oil, maple syrup and vanilla extract to the chocolate and pour over the warm coconut milk. Stir gently to combine.
  4. Cover the bowl with clingfilm and pop in the fridge to set for at least 4 hours or overnight.
  5. When the truffle mixture is almost set, place the 4 different decoration toppings on individual plates.
  6. Scoop out a tablespoon of the truffle mixture and roll in the palm of your hand to form a ball *
  7. Then roll them in the different toppings, alternating between the colourful decoration or simply choosing cocoa powder.
  8. Return the decorated truffles to the fridge for around 10 minutes to firm up, then serve.
