Hands up who likes the look of these apple pie oats but thinks it will take too long to make in the morning? I’m here to convince you that after a little Sunday prepping, you could whip this bowl up in under 5 minutes!
If you’re someone who skips breakfast every morning, snacks as soon as they get into work and then spends the rest of the day with a niggling hunger – please listen! You need food in the morning to function, end of. That means a delicious, wholesome meal (not just a snack bar). If it isn’t delicious, why bother?
I’ve been a fan of overnight oats for years now, and although the concept of cold porridge sounds pretty disgusting, I assure you it’s really not! As of this week, I’ve made a promise to myself to make overnight oats every Sunday night, so when Monday morning comes around and I’m faced with a whole week back at work, I’ve made my morning that little bit easier. That’s what breakfast should be about – easy, healthy and delicious food.
This apple pie oats recipe is currently my favourite flavour combination. The base consists of creamy & sweet oats, lightly spiced with cinnamon, then topped with the most moreish caramelised cinnamon apples, peanut butter, crunchy pumpkin seeds and cinnamon granola. Can you tell I like cinnamon?
There are two ways you can make this recipe;
- Make the oats the night before and cook the apples in the morning. You can then assemble your bowl with warm, freshly cooked apples – delicious!
- For those who don’t have much time – make your oats AND cook the apples the night before. In the morning you can portion the oats into jars and heat the apples in the microwave for 30 seconds. Breakfast in under 5 mins!
Apple Pie Oats
- 50g GF oats
- 125ml milk, dairy free if needed
- 4 tbsp yoghurt, dairy free if needed
- 2 tsp honey
- 3 tsp cinnamon
- 2 red apples
- 1 tbsp coconut oil
Place the oats, milk, yoghurt, honey and 2 tsp cinnamon in a bowl. Mix together, cover and pop in the fridge overnight (or for at least 3 hours).
In the morning (or night before) chop the apples into small cubes and fry in a pan with the coconut oil, 1 tsp cinnamon and a drizzle of honey. Sautee for 5-10 mins until the apple cubes are soft.
Place your pre-made overnight oats in a bowl or jar, then top with the caramelised apples and any other toppings.
I chose to top mine with peanut butter, pumpkin seeds, dried raspberries and my favourite cinnamon granola - yum!
