It’s about time I shared another yummy bowl of gluten free oats, seeing as I eat them everyday! In my eyes, there’s no better way to spend your bank holiday Monday than eating a yummy bowl of apple and raspberry bircher muesli.
I’m currently on my way back from a lovely sunny weekend camping in North Yorkshire, but I would totally be eating a big bowl of this bircher if I was at home! If you’re a breakfast addict like me, do you find it hard finding a delicious brekkie when you’re away from home? I like to add a million toppings to my oats and smoothie bowls (as you can see), but I can never re-create the same style of breakfast outside of my kitchen!
Porridge pots are usually my go-to for an on-the-go gluten free breakfast, as they only need hot water. However I miss my berries, nut butter and granola! If anyone has any tips please help a girl out!
It’s all about the base
A traditional bircher muesli is usually made with grated apple and apple juice. However, in this recipe I’ve decided to only use the grated apple as I didn’t want it to be too sweet. Swapping the apple juice for milk also creates the most delicious creamy consistency, which I personally love!
A touch of cinnamon and maple syrup blends beautifully with the apple, bringing a warmth to the bowl. Plus cinnamon always makes me excited for autumn! Although not traditionally in bircher muesli, I’ve added chia seeds for extra fibre.
Whether you like to have a leisurely breakfast in the morning, run around like a headless chicken or heaven forbid skip breakfast – I would highly recommend you make this bircher! Breakfast is my favourite time of the day and one I never like to rush. However, not everyone has the luxury of time in the morning.
That’s why this apple and raspberry bircher muesli is the perfect quick breakfast. It’s super easy to prep the night before and ideal for making in bulk – winner! To make a varied breakfast for each day of the week, double of triple the ingredients and portion into mason jars or tupperware boxes. Then each morning you can add your favourite fruit, granola and nut butter and you’re ready to go!
Apple & Raspberry Bircher Muesli
- 100g GF oats
- 240ml milk of choice
- 1 red apple
- 1 tsp cinnamon
- 2 tsp maple syrup
- 1 tbsp chia seeds
- 100g fresh or frozen* raspberries
Grate the apple into a bowl, then add in the GF oats, milk, cinnamon, maple syrup and chia seeds. Give everything a good stir.
Slowly fold in the raspberries - if a few break up it doesn't matter!
Separate into two bowls (or mason jars) and pop in the fridge overnight (or at least 4 hours)
In the morning give the bircher a stir and add your favourite toppings. I chose peanut butter, fresh berries and pistachios.
