It’s been two weeks since I’ve posted on this blog, and I have to say it’s been lovely having a break! I’ve had a lot on mind the last couple of weeks, and something has to give in order for me to not completely melt down with stress.

Ok, it’s not quite my blogiversary today – this was actually at the beginning of March, but being the busy bee that I am I completely forgot to celebrate!
Banana bread is one of the most underrated baked goods. It’s the perfect breakfast, dessert or snack, can be eaten straight away or toasted, and uses up all your brown, speckled bananas!

I was determined this month to create a gluten-free chocolate brownie recipe that was simple to make, had ingredients you’d find in your every day (healthy) pantry and ultimately be a dessert you could whip up at any moment.
Calling all you lovely almond fans out there – this yummy Cherry Bakewell cake was created for you! Bakewell tarts are one of my all time favourite British treats. With there buttery pastry base, cherry jam middle, frangipane topping and glacé cherry – they’re just heavenly! However since I’ve been diagnosed with Coeliac Disease, I haven’t been able to find a gluten free alternative that will curb my cherry/almond needs.
Yep, nothing can really get better than chocolate gingerbread at Christmas.
Happy beginning of December, aka CHRISTMAS MONTH!
The festivities are in full swing – I’ve put up the Christmas tree & decorations, umpteen amounts of hot chocolate and gingerbread lattes have been consumed and Christmas music has been playing at the gym. It’s safe to say life is pretty good at the moment!
These double chocolate granola bars are the perfect snack. They’re crunchy, VERY chocolatey, but not sickly sweet (meaning you can eat more!) I like to keep them in the fridge to have as a mid-afternoon treat with a cup of tea, or after dinner if I’m craving chocolate.
