I’ve been in a bit of a pancake rut recently. I’ve perfected my banana pancakes to the point that they’re nearly perfect every time. In terms of toppings I’ve experimented with yummy flavours like toffee apple and salted caramel, but so far I haven’t ventured past my safety net combo of oat flour/banana/egg as the base.
This year I’ve decided I’m going to venture past my safety net ingredients and start creating more interesting and diverse recipes. If it takes me 5 times to perfect the dish then so be it! After attending the Influencer Marketing event with the Health Bloggers Community last week, I’m definitely in a girl boss mindset at the moment. My head is full of recipe ideas (making me hungry ALL the time) and I’ve filled my content calendar up until the end of March. Over the weekend I made, photographed and edited 4 different recipes for upcoming blog posts, as well as coming up with some more lifestyle/gluten free living post ideas to add more diverse content to my blog. It’s safe to say I’ve had a busy week!
After my plan to experiment with new flavours/girl boss mindset, I decided to create a new delicious pancake recipe for you all, which is where these matcha green tea pancakes come in! I’m definitely not the matcha for breakfast kinda gal (gimme chocolate oats any day though), however I wanted to try something different and play around with a new and exciting flavour. I’ll admit, the first attempt at these pancakes didn’t turn out great. But like my new mantra and motivation for this year, I persevered and adapted the recipe and I can happily say the final outcome is pretty darn scrumptious!
This recipe uses matcha powder which is absolutely packed with antioxidants. This may seem like a bit of a buzz word and overused in the health industry, but you can’t deny the insane health benefits matcha green tea has to offer! I’ve listed a few of them below;

Matcha green tea is such an easy way to add a healthy boost to your everyday diet – simply drink as a more intense green tea or with milk to create a matcha latte, add into smoothies or porridge, roll into energy balls or make yummy matcha pancakes! One cup of matcha = 10 cups of regularly brewed green tea in terms of nutritional content – so if you love your regular green tea you may want to trade up to this powerhouse of a powder!
Makes 8-9 pancakes
- 1 cup GF oat flour (100g)
- 1.5 tbsp matcha powder
- 1 tsp baking powder
- 2 eggs or 2 flax eggs*
- 1 cup almond milk (125ml)
- 1 tbsp maple syrup
- 2 tbsp coconut oil, plus extra for frying
*to make a 1 flax egg mix 1 tbsp ground flaxseed with 2.5 tbsp water – then leave to sit for 5 mins. This will form a gloopy mixture which you can then use in the recipe.
- Coconut yoghurt
- Frozen raspberries
- Chopped pecans
- Date nectar/maple syrup
- Melt the coconut oil on the hob or in a microwave until melted. Next, blend all ingredients for the pancake mix in a blender until smooth.
- Pop in the fridge for 10mins to firm up.
- Take the pancake mix out of the fridge. Heat a little bit of coconut oil in a frying pan and spoon 1-2tbsp of pancake mix into the pan. Smooth into a circle with the back of your spoon.
- Fry for 2-3mins on either side or until they have small air holes and have started to colour. Repeat for the rest of the batter.
- Stack your pancakes on top of each other, adding the coconut yoghurt and as many fruit and nuts as you like!
