Hands up who’s a peanut butter & banana obsessive?! If so keep reading as I promise these yummy oat bars will be the ones for you! With a mixture of oats, almonds and dates for the base and topping; these oaty bars are deliciously sweet and very addictive. Combined with the gooey peanut butter and banana centre, they’re honestly a match made in heaven! They’re so easy to make and only need 10 mins in the oven – perfect if you need to bake a quick dessert or have those ‘need something asap’ sweet cravings!
I made these for my London friends who visited for the weekend (FYI, they loved the night out in Peterborough) and they went down a treat! We ate them as a quick afternoon snack and later served with ice cream – Magnum Almond to be exact – for dessert, yum! I would advise making more if you’re sharing them around as they don’t last long…
Makes 16 bars;
– 3 cups GF oats (300g)
– 3/4 cup ground almonds (90g)
– 1 cup dates, pitted and soaked* (150g)
– 2 tbsp cocoa powder
– 2 tsp cinnamon
– 1/2 cup coconut oil (100g)
– 2 tbsp honey
– 1 cup ripe bananas (300g)
– 1/2 cup peanut butter (130g)
– 1 tsp maca powder
– 1/4 cup honey (170g)
*if using dried dates I usually soak them in boiling water for 5mins before using – this softens them up so they blend easier. If using Medjool dates they don’t need soaking and can be used straight away.
Preheat oven to 180C/365F/gas mark 4 and line a baking tray with greaseproof paper.
Combine all of the ingredients for the oat mixture in a food processor – the mixture will be a loose texture but if you pinch it together it should hold its shape.
Heat the filling ingredients in a small pan on the hob – adding water as needed to loosen the texture. I used a fork to mash the banana and other ingredients together. The filling mixture will be thick but should move around easily.
Press 2/3rds of the oat mixture into your lined baking tray, using the back of a spoon to spread the mixture around (a wet spoon will stop it from sticking). Pour your banana and peanut butter mixture over the top; finishing with the second layer of oats. Make sure everything is in an even layer.
Bake in the oven for 10 mins. Let them cool before slicing into bars and store in the fridge. These will only last for a few days so make sure you eat them quick (although I’m sure that won’t be a problem!)
