I feel like snacks get a bad rep sometimes. We’re told to eat hearty, filling meals so we don’t feel the need to snack in-between courses. However, I don’t remember the last time I lasted from lunch to dinner without a little nibble of something in-between!

Weekends are made for relaxing, spending time with friends and family and eating delicious stacks of gluten-free pancakes and waffles! I might not always have time to make a decadent brunch for my family (porridge is the usual brekkie in my house) however if I’m hosting brunch for family/friends, waffles are my go-to breakfast food of choice. They’re ridiculously easy to prepare and only take 3-4 min to cook, so even if you’re preparing brunch for multiple people, it won’t take long for everyone to be served.

I’m a firm believer that healthy food should be quick, easy and taste delicious. Whether that’s a fresh bowl of salad, a yummy stack of blueberry pancakes or a simple snack like crunchy chocolate & peanut butter doughnuts. Healthy food doesn’t have to include expensive and inaccessible ingredients, they should be ones you can find conveniently, as you’ll be much more likely to make your own healthy snacks if you can easily find the ingredients!
