Gluten Free Pumpkin Spice Porridge

Before autumn turns into Christmas central, I thought I’d share my favourite cosy breakfast: gluten free pumpkin spice porridge!
To celebrate #WorldPorridgeDay (the best day of the year), I thought I’d share how you can build the perfect gluten free porridge bowl!
Anyone else feeling ridiculously cold at the moment? Although the snow weather warnings have been coming in thick and fast, I’ve not seen any settling nor have I had a snow day yet! To keep myself warm in the mornings, I’ve been making this simple gluten free winter porridge on repeat, and it’s definitely doing its job by making me feel all cosy and warm inside!
Hands up who likes the look of these apple pie oats but thinks it will take too long to make in the morning? I’m here to convince you that after a little Sunday prepping, you could whip this bowl up in under 5 minutes!
The most important day for Oat So Delicious is finally here…WORLD PORRIDGE DAY!
Porridge is by far my favourite way to start the day, and I think I’ve tried every single variation out there. I love it so much I even named my blog after the key ingredient! Whether you’re eating a bowl of creamy banana porridge, chocolate coffee (mocha) or tea infused oats, enjoy the cosy, warming feeling you get from a delicious bowl of hot porridge.
Chocolate, ginger and pear are three of my all time favourite flavours. They’re so wintery and comforting and perfect in this porridge recipe. You may remember my chocolate and pear baked porridge which I made last year – this is a very similar recipe but has the addition of ginger which adds a little spice to the bowl. Baked porridge is the perfect excuse to have cake for breakfast (honestly it’s so similar!) but if you’re looking for the perfect, creamy consistency then stove-top porridge is your answer.
Whenever I make mince pies, I always make more of the mincemeat filling than necessary – usually for more mince pies! This time however, I thought I’d be a bit more creative with my leftovers. Last week I shared my Healthy Mince Pie recipe, and as per I made too much filling – so thought why not use the extras in my all time favourite breakfast – PORRIDGE.
Baked porridge has always been one of my favourite breakfasts. Ever since I started getting into healthier eating around 4 years ago, baked porridge was my go-to weekend breakfast because it tasted just like cake! It was a lightbulb moment when I realised healthy eating might not be so bad after all.
Autumn recipes are here! I’ve been so excited to post Autumn/Winter recipes ever since I started this blog in March (how has it been 8 months already?!) and don’t even get me started on Christmas recipes! If there’s any Scrooges reading this I’m afraid Christmas is only 10 weeks away, so be prepared that at least 6 of them will be Christmas themed!
