Autumn Spiced Energy Bites

Now it is ‘officially’ autumn, it’s time to share a new easy-peasy snack recipe! These gluten free autumn spiced energy bites are packed with seasonal spices, gooey dates and nutty pecans. A combination perfect to snack on while sipping your pumpkin spice lattes!

I’ve always been into the ‘quick and easy’ snack recipes. Who has time to make elaborate vegan layered cheesecake bites and gluten free caramel squares on a weekly basis? As delicious and fun to make as they are, I’m all about the everyday simple snacks that pack a punch!

7 ingredients

That’s why I’m in love with these autumn spiced energy bites (and I’m positive you will be too!) With only 7 ingredients, they are super quick and easy to make and don’t require you to take out a loan to buy the ingredients. In other words, everything you want in a homemade snack! The 7 ingredients are:

Pecans
Medjool dates
Maca powder
Cinnamon
Ginger
Almond butter
Maple syrup

Starting with the base of this recipe – pecans and medjool dates. Pecans are the perfect nut to use in any autumnal recipe. They are delicately flavoured with earthy/woody notes, super creamy and very delicious. I love using them on top of yummy autumn porridge bowls, in chai spiced granola and of course speedy snacks!

Medjool dates are the other main ingredient in these spiced energy bites. Sweet, gooey and extremely easy to blend up – they are the ideal type of date to use in raw baking. Alternatively, you could use another variety of soft/dried dates, and soak them in boiling water for 10 minutes.

Although they won’t be as gooey as medjool dates, they will be soft enough to use in this recipe. You can then save the date infused water for other recipes like overnight oats and cosy porridge bowls!

INGREDIENTS

100g pecans
100g medjool dates, de-stoned
1 tbsp maple syrup
1/2 tsp maca powder
1/2 tsp cinnamon
1/8 tsp ginger
1 tbsp almond butter

RECIPE

  1. Add the pecans and dates to food processor and process until they have broken down.
  2. Next, add in the remaining ingredients and process again until everything is mixed together.
  3. Roll 1 tbsp of mixture into small balls and place on a baking tray. Pop in the freezer for an hour.
  4. Once set, drizzle over melted dark chocolate and enjoy!
