Giant Chocolate Dipped Cookies

I want to start off by saying sorry for not posting yesterday! I’ve had such a busy weekend visiting family in Harrogate, and although I took my laptop with me to write this post, I completely forgot to take my notebook which has all my recipes in! Big fat fail. However I had a lovely time seeing all the family, eating wayy too much food and generally having a good time!

These chocolate dipped cookies were so fun to make, once the cookie has cooled down you can then dip or coat them in the chocolate and add your decoration. I used freeze dried raspberries, but if these aren’t available I think chopped pistachios would look and taste great as well!

INGREDIENTS
Makes 8 giant cookies;

Cookies
– 1 1/2 cup ground almonds (180g)
– 1/2 cup GF oat flour (60g)
– 1 tbsp coconut sugar
– 1ts cinnamon
– pinch salt
– 1/3 cup coconut oil, melted (65g)
– 1/4 cup maple syrup
– 1/2 tsp almond extract

Decoration
– 75g dark chocolate (I used 70%)
– freeze dried raspberries

METHOD
Preheat oven to 180C/365F/gas mark 4 and line a baking tray with greaseproof paper.

Mix the dry ingredients for the cookie mixture together in a bowl until fully mixed. In a separate bowl stir together the wet ingredients, making sure there are no lumps.

Pour the wet ingredients in the dry ingredients and mix together. Next you need to take a spoonful of the cookie dough, shaping your cookies into the desired shape. Place the cookies on the baking tray, making sure there’s enough space between each cookie as they will expand quite a bit.

Bake for 12-15mins, then take the tray out of the oven and let them cool completely. While these are baking you can melt your chocolate on the hob – I use the bain-marie technique to avoid the chocolate burning.

Dip the cookies into the melted chocolate once they have cooled, sprinkling the freeze dried raspberries (or other toppings) over the chocolate.

Place in the fridge until the chocolate has set, then enjoy!
