5 Quick & Easy Gluten Free Breakfasts

These 5 quick and easy recipes are staples I make each week – as much as I love porridge, pancakes and waffles, most mornings I don’t have more than 20mins to make, photograph and eat my breakfast.There should be a recipe for everyone here, whether you love overnight oats, granola & yogurt or smoothie bowls – I’ll have something quick and easy for you to make!

OVERNIGHT OATS
This is the breakfast 95% of you will think of as quick and easy, yet still healthy. It simply requires 3 minutes of your time the night before to mix everything together, then all you need to do is add the toppings in the morning!

  • 1/2 cup GF oats
  • 1/2 cup milk
  • 1 mashed banana or 1/2 cup yogurt
  • extras: cinnamon, peanut butter, honey, chocolate chips
  • toppings: berries, nuts, date nectar, maple syrup etc

Mix everything together and leave overnight – give it another stir in the morning then add your toppings.

DELICIOUSLY ELLA’S BIRCHER MUESLI
Ever since this product came out, I must have had it at least twice a week! It’s the easy version of traditional bircher muesli – the oats are milled to a fine flour so the soaking time is reduced to only a few minutes. Check out the recipe below to find out how I use Ella’s bircher muesli. If you’d like to make your own version, try my instant bircher muesli which was inspired by this product!

  • 1/2 cup Deliciously Ella Bircher Muesli
  • 1/2 cup milk
  • 1 mashed banana (optional)
  • 1 tsp cinnamon
  • 1 tsp honey
  • toppings: berries, flaked almond, chia seeds and peanut butter

Simply mix everything together until creamy, then add your toppings.

OAT SO DELICIOUS ‘CEREAL’
I’m not a big fan of traditional sugary cereal – they never seem to fill me up and I hate to think of how much sugar is in them! I prefer to make a big batch of granola and serve with rice puffs and berries – the sweetness from the granola makes this combination really tasty, while the rice puffs adds another element of crunch.

APPLE & CINNAMON GRANOLA BOWL
When I think of yogurt, fruit and granola I automatically think spring/summer. However it doesn’t have to be that way – this yummy granola bowl has coconut yogurt, cinnamon granola and yummy home grown apples. Perfect for this time of year when it’s not quite freezing, but you still want to feel autumnal.

  • yogurt – coconut yogurt works lovely with the apples/cinnamon
  • cinnamon granola – this was made using my ‘build your own granola‘ recipe
  • chopped apples (apple compote would also be lovely)

Simply load up your bowl and you’re ready to go!

CHOCOLATE SMOOTHIE BOWL
This decadent breakfast tastes really unhealthy, but I promise you it’s not! It’s perfect for those mornings when you’re in a really chocolatey mood – ie most mornings in my house. All you need to do is blend everything together until smooth.

  • 1 frozen banana
  • 1tbsp cocoa powder
  • 1tbsp GF oats
  • 1tbsp chia seeds
  • 3/4 cup milk
  • 1tsp honey
  • optional – sometimes I like to add in 1 Nutri-Brex or 1/2 cup flaked cereal to add a bit of substance to the smoothie.
