Spiced Orange & Date Porridge

Autumn recipes are here! I’ve been so excited to post Autumn/Winter recipes ever since I started this blog in March (how has it been 8 months already?!) and don’t even get me started on Christmas recipes! If there’s any Scrooges reading this I’m afraid Christmas is only 10 weeks away, so be prepared that at least 6 of them will be Christmas themed!

This orange & date porridge is spiced with cinnamon and nutmeg, making it the perfect warming breakfast for these colder October mornings. It’s actually not the cold that gets me in the mornings anymore (hello coats & jumpers), it’s the dark! I hate waking up when it’s completely dark outside, it feels completely unnatural.

INGEDIENTS
Serves 1

– 1/2 cup GF oats (50g)
– 1/2 cup milk (120ml)
– 1/2 cup water (120ml)
– 1 tsp honey
– 1 tsp cinnamon
– 1/2 tsp nutmeg
– 1 satsuma
– 3 dates, chopped*

Method
Pour
 the water and milk into a small saucepan, transfer to the hob and allow to boil. While this is boiling add your oats, spices, honey and half of the chopped dates to a bowl.

Turn the heat down as soon as the liquid has boiled and add your oats etc to the pan, stirring together until everything is fully mixed. Heat on a low temperature for a few minutes and continue to stir. This will start to thicken up.

Turn the heat off when you have a creamy consistency and transfer to a bowl. Add the satsuma segments and the remaining dates on top – enjoy!

*Medjool dates work the best but dried dates are fine.
